Today i reversed seared a short loin/sirloin steak (unsure about translation) with mesqiute wood as smoke to 54 degrees low and slow (110) and let it rest After that i quickly let it touch the grill really hot. Was epic!

I'm making a seriously badass strawberry cheesecake tomorrow and my sister won half a lamb in a meat raffle.

Good feeds inc tomorrow night.

I hate fat on stuff, when I carve a joint I cut it all off, oh and those tubes *shudder* those fucking tubes inside meat are ghastly, those little vein like things. Erm, maybe I shouldn't be in this thread :(

We did try not eating meat a while back and found it surprisingly easy, I would choose a cheese sandwich over a roast dinner any day of the week.

Cut it off, after its cooked :) much of the flavour and certainly most of the moisture comes from the fat.

The fat thing is not the reason I would cook god awful dinners, the fact that I can't cook is the reason for that. Well, no. Maybe I can cook but I stress out far too easily and quickly when cooking and I can't do it without having a meltdown.

I'm the opposite. I get pissy over silly things but when I cook I am calm. Like a lot of things, cooking is just about timing. If you know when you need to do something then its pretty easy.

Unless my wife comes in the kitchen looking for something to eat out the fridge or whatever.

Yes. In fact I do quite often, just last week my wife did a roast dinner and I had a sandwich, it wasn't just cheese though it had ham on it as well.

When I was a kid we would all (we are 7) go to my uncles (a dr and a family of 7 also) there would always be a large baked ham... As he was carving he would take the fatty rim and tell us to imagine it on a piece of string.....I couldn't eat any of it and since then I can't abide any rims of fat or tubes *vomits*
