As I scrolled quickly down the page, saw this out the corner of my eye, and my initial thought was: someone's bragging about how many buttons & shit their new mouse has.

Perfected my home made chips tonight, absolutely delicious.

Cut potatos (leave the skins on) Maris Piper are the best. 1cm thick (ish)
Put them in a pan with salt and pour boiling water on them, bring to the boil and simmer for 5 minutes
Drain them and leave to cool for 10-15 minutes
Pre-heat half and half goose fat and olive oil in a metal baking tray, enough to have about half a mm of oil at the bottom.
Put them in the oven at 210 for 20 minutes
Turn down to 200 for another 20-25 minutes

It's good, won't be triple cooked good but I bet they still taste fucking great.
