Desiree potatos

Wash
Peel
Chop into quarters
Par-boil (keep testing with fork, not too long on the boil)
Drain water
Cover pan with lid
Shake fairly vigorously until the outside of the potatos are fuzzy (not too hard so they break).
Place spuds in baking tin
Apply a liberal amount of fat over the spuds (vegetable fat, duck fat, chicken fat, etc)
Smother in chilli flakes. Season with salt & pepper
Roast for something like 30-40 mins at 200
Turn oven off when golden brown
Serve straight away
Enjoy
Wait a few hours
Poo

That's exactly what I would have guessed at. BTW - I reckon it's 7 mins boiling for desiree if you have consistent sized pieces, and straight into hot fat.

Hmm, well our potatos aren't consistent sized. Looks like Village of the Damned when you lay them out.

Put the fat in the tin on its own first, stick it in the oven for 10 minutes, when the potatoes are boiled and roughened, replace the pot with the baking tray, add the potatoes, cook for 2 minutes, then put the tray in the oven for 35 mins

Would love to do a Baron of Beef one day, big party/wedding I guess. It's a saddle of beef pretty much(both striploins, bone in, not chined, not trimmed, some of the flank on still, pure awesomesauce) Nigh impossible to get as all beef is quartered at the slaughterhouse(iirc they have to take out part of the spine for bse). Must try and get in with some beef farmer.

That doesn't give you as much of an idea in size as it looks. The flank is pretty thin and long. You can see some of it on the picture I posted, the bit that's curling around. The leg muscles(top side/silverside/top rump) are massive before you cut them to rolling size.

Nothing wrong with a 2004 Pape though mate, red can work well if your dinner is rich enough and a proper roast will always be rich. Good lad.

Well, we are having a roast chicken tonight. Just been taken out of the oven. What I mean is, I've been on the computer, the Mrs cooked it, prepped the spuds, and did all the work. Under the circumstances, probably best not to run into the kitchen shouting "where's my dinner you lazy mare".

Been to the pub for lunch and had a large roast dinner. A mixture of roast beef and roast pork. It was delicious!

Bah, not really the same thing. You should have roasted the hamburger at least. In a few months you could have a side order of roast wasps as well. Yummie!

funnily enough I actually saw a wasp. pissed me right off :(

burger was a grilled gourmet burger with bacon (duh), emmenthaler, a blue cheese I forget the name of and avocado.
