I have the basic Global knives so the more expensive ones may be a lot better.

You are more likely to cut yourself with a blunt knife than a sharp one.

Oh and @Lamp there are knife courses you can do that teach you how to chop up veg and meat properly.

I did one for veg and still use the skills today. Still miles away from a proper chef but at least they are chopped up effectivelyand very similar sizes for even cooking

Aye. And you shouldn't cry cutting an onion with a very sharp knife. Apparently a less than very sharp knife bruises the onion cells and releases the gas that makes you cry

Its safer to have a sharp knife, it doesn't slip.

I use some knives from Global. GLOBAL | MASTER CUTLERY CORPORATIONGLOBAL They're not super high end but they can be quite sharp and hold an edge well.

edit : a cooking fan friend of mine uses german knives and calls my globals "pish, for peasants". I'll have to ask him what brand he has.

I'm in the market for a new chopping knife. Haven't got a clue which one to get. Preferably not an insane Japanese knife that will cut you by just looking at it and costs £200. And not some supermarket pish that is barely better than the ones in my drawer.

I used to do that 30-40 times a day during Christmas and Easter.

I'd have to ask him. Iirc it's neither, or a special edition as iirc his knives are forged rather than stamped.

Global knives are great, I've got a few and so far managed to avoid any sort of injury. However, axes? Not so much. Bought a new hand finished Swedish axe for wood chopping on a wild camping trip and this happened three weeks ago (almost to the bone):

So I'm thinking why is the background so fuzzy when using the camera, so I checked the lens for dirt, and found the missus had smashed it to bits using my phone two days ago..oh yes she said, forgot to tell you.
The autofocus had glass in it and wouldn't work, picked it all out and fixed it, thought I'll get a whole new camera module just in case...shocked at the price...Samsung Note original part camera module...from Hong Kong 2.99 inc post.

I've given mine skads of missuse. I've even dropped two of the buggers on my stone tile floor ( ) and nothing like that has ever happened. not even the point getting dinged.
