You could. Slow cooking Chili is fine, and that's how I usually do it, but you don't have to; you can make decent chili in 30 minutes. Do you really need a recipe? Its mince (brown it first and drain off the excess fat), tin of tomatoes and some paste or passata, chilli, garlic and kidney beans (tinned); not exactly Masterchef. I use paprika and I sometimes add finely chopped onions and peppers (better to pre-blanche these but you actually don't have to) but that's not really "proper" chili.

500g of minced steak (mince meat is good for pretty much nothing)
1 table spoon garlic power
2 table spoon chilli powder
1 table spoon paprika (smoked if you have it)
1 table spoon cayenne
half a teaspoon black pepper, course if you have it
Bit of salt
Tea spoon of brown sugar, browner the better.
Chopped Peppers, however many you fancy
Kidney beans (hate them myself so usually don't bother)
bit of olive oil
Tin of tomatoes
Whole decent size onion, roughly chopped (just smash the crap out of it, various sizes)
Tube of tomato puree
Juice of 2 limes
cup of water
Hotsauce to taste

Don't brown the meat before hand, if its good meat you do not need to drain off the fat, put it all in and leave for 6 hours.

If its supermarket reclaimed mince crap its mostly acrid water so yeah, drain it. Then throw it away or feed it to the dog/cat.

I stick mushrooms and Worcestershire sauce and some tomato puree. Couple oxo cubes. Along with the mince onion beans and garlic.
