Performance is identical, all Stamina Mode does is turn data off when the screen is off. Ultra Stamina on the other hand, turns your phone into a mid noughties feature phone, but can make the battery last days.

Data (and wireless in particular) use battery, it's not about actually using data on your plan. Turing wireless off in particular makes a massive difference.
