Plus, other than ES File Explorer I've no idea what I'm going to stick on the missus' Nexus 7 that I just ordered

I like that, cracking list tbfh. However, anything specifically tablet-y? Not that I'd want to exclude those - some of which are going to hit our S2's

I use Evernote a lot with my tab, and I have a Kindle reader, a Kobo one and a generic ePub reader (saves all that fannying about with Calibre etc.)

All apps purchased link to your gmail account. So not really if you don't want it linked you need to create and use a separate gmail account as it needs one.

If you mean you don't want your Gmail synced, you need to go into Settings > Accounts, choose your account and disable sync.
If simply can't use Google Play without logging into a Gmail account as soze said. Your purchases are linked to your account. You can sign in, purchase, download, then log off/disable if you're bothered about people accessing your email.
You can also set a PIN for Google Play so people can't use your account by accident to make purchases.

I just went straight for VLC as there's a VLC for andriod on their site, seems to work so far as I've been using another free program to rip all my DVD's to pc/tablet.

Gray - if you want to listen to Everton matches, just download the official app. Every match has streamed audio (with somewhat biased commentary!)

You could just use a vpn if the problem is location - sporting rights mean they cannot broadcast the events outside UK.

Works the same way as the Nvidia shadowplay, luckily I have that functionality built in to my Shield Tab. Awesome but you need a controller and a way to customise the button functions. If you notice the vid he did nothing but left click mouse so would be very limiting in touch mode only.
