Made a thick winter vegetable soup with some chicken - absolutely fantastic !
Can't go back to canned stuff now. Home made is sooooooooo much better. Made enough to last a week LOL

I make everything myself, sometimes even bread, basically, if i'm not lazy arsed at the moment.

You should try my home made, sweet corn, bean, JD chili extravaganza :D

I make a mean chicken soup and I picked up a great butternut soup recipe while I was in Johannesburg. Homemade soup 4tw!

I love home made soup, specially my aunties leek and potatoe soup, but personally I haven't the time, knowledge or will power to bother making home made soup myself so Heinz for teh win.

It's cheap student food. Used to make endless vats of 'bone soup' from 10p per pound bags of bones from Morrisons in Leeds. Plus the veg ofc. Doubt they even sell bones anymore, bet you have to go to a decent butchers.

Less grim, used to make nice cheese and onion soup. Not hard, just fry the onions in some butter, add a bit of flour, add water, boil up to thicken and grate the cheese in at the end.

youre right there, i live with my parents while at uni so i dont have to worry where the next meal is at.

Heh, didn't mean it like that, but good to hear. Noone should, even if it's very teaching, to go through that rough patch.

I think back-in-the-day (15yrs ago) would've been on 2200 quid grant and about 800 quid loan on top.

Missed out on the days when you could claim housing benifit and dole during the hols by a couple of yrs, students musta been fucking loaded then, life of luxury.

Problem was not lack of cash tho, just think food would've been low down the priority list expenditure wise. If bone soup is bad, friggin TVP is worst...

Bone soup is awesome, my grandad used to make it and it was amazing how much flavour he could get out of a few bones.

i make quite a few soups at home, one of my favourite things to eat - with a big hunk of crusty bread. leek and potato, sweet potato and carrot, root vegetable soup in winter, spring vegetables in spring/summer, my favourite though is a greek lentil soup called fakés. we were introduced to this on tour, it's what some friends cooked for us in sweden. beautifully rounded off with home made apple crumble with vanilla ice cream.

Ingredients

* 1 cup green or brown lentils (green lentils are softer in texture and flavour)
* 2.5 litres cold water
* 1 large celery stick + leaves, finely chopped
* 1 small carrot, finely chopped
* 1 small zucchini, finely chopped
* 1/2 red capsicum, finely chopped
* 1/2 cup shredded pumpkin or sweet potato (optional)
* 1 cup shredded cabbage (optional)
* 1 X 400g can chopped tomatoes (e.g. La Gina) (if soup is not 'tomatoey' enough add a heaped tablespoon of tomato paste)
* 1 large onion, finely chopped
* 4 cloves garlic, chopped
* 1/2 cup chopped parsley
* 3 bay leaves (remove at end of cooking)
* black pepper
* 2 massel vegetable stock cubes
* 1 teaspoon dried oregano (at the end of cooking)
* iodised salt (at the end of cooking according to taste)
* 1/3 cup extra virgin olive oil (added at the end of cooking)
* 2 tablespoons vinegar (e.g. balsamic) OR 1 teaspoon of cumin
* Accompaniments: bread, olives, fetta, sardines, wine

Method

1. Put lentils in 2.5 litres of water and place on stove on low heat
(if you add lentils to boiling water it will make the lentils tough)
2. Chop all raw vegetables finely and add to simmering lentils in pot.
3. Simmer soup for 30 minutes then add tomato, parsley, garlic, pepper, stock cubes. (It's best to add tomato/stock cubes towards the end of cooking because these tend to 'toughen' the lentils)
4. Simmer for a further 1-2 hours or until lentils are tender.
5. Add olive oil and oregano at end of cooking to the pot
(this will retain antioxidants in the oil and oregano) OR drizzle olive oil on the surface of the soup once served in bowls (this is the traditional Greek way to serve the soup). You may wish to add some iodised salt at this point.
6. If soup is too chunky (e.g. for your kids) or too "watery" use a hand blender to blend the soup for a couple of seconds to thicken it.
7. Finally, add vinegar to soup in pot and stir through - this will give the soup its characteristic tang. If you prefer a spicy flavour, add some cumin to the soup instead of vinegar.
8. Serve with wholegrain toasted bread. For an absolutely complete "Greek" meal accompany soup with olives, reduced fat fetta, sardines and a glass of wine.
