Here's a tip on a quick easy topping for the meat...

just mix creme fraiche and grated parmesan cheese together, should be pretty thick mixture, add garlic after your own taste, put on the hot meat and let it melt.. mmmmmm

hold that thought buddy, bbq weather isn't here just yet but when it is i'll be experimenting with that...could you use greek yog instead of creme fraiche?

No not that white stuff CorNokZ...not that.

Also if you want something different, whipped cream that has some beatroot juice mixed in it. Goes perfect with fish.

Bah we had 20 degrees this weekend, 35 under the built-in porch, i look just like a boiled crawfish atm, deep dark red, 3 days under the lowely spring sun. Good bbq, good beer, good toppings and sidedishes.

Ohh and as a starter graham flour cup cakes with a slice of smoked lax and the parmesan/garlic/creme fraiche ontop.. mmm


And a sidedish to the meat, pico de gallo..
1 red, 1 green, 1 yellow paprika
3-4 deseeded fresh tomatos
2 yellow onions
Chop into about ½cm large pieces mix in a bowl
with ½ dl chopped coriander and ½ dl chopped basil
3-4 cloves of garlic
1-5 jalapñeno or serrano chilis
mix limejuice (takes around 8 limes) with equal ammount of white wine vinegar (i use half normal white wine vinegar and half balsamic white wine vinegar) and pour over the veggies, should go up to about 2/3rds of the veggies, and let sit for a few hours before eating...

Well found another use for this recipe.. :) Potatoe sallad..

Just take 6dl creme fraiche mix with half a parmesan wedge, garlice, salt and pepper after your own taste, and drop in freshly boilde peeled and diced potatoes and let it stand in the fridge for a while and you get a really creamy dish.. The best result you get if you boil the potatoes and let them cool for an hour or two, not use day old or older potatoes then you have lost alot of the starch in the potatoes :)

Ketchup, Chipotle Chile Ketchup, Dark soy sauce, Teriyaki sauce, Clear honey and some bourbon whisky.

Absolute awesome sauce for ribs!!!!!!!!!!!!!! and I mean fucking plate licking good, only problem I have with producing it is I Have to keep ordering the Chipotle sauce off line but that's not really a negative thing now is it!!!!!

1 litre Ketchup
Zest from 2 oranges
Juice from 2 oranges
2 tablespoon Sweet Mustard
2-3 tablespoon Sunflower/Rape/Flax oil.
2 tablespoon Mushroom Soy sauce
Salt/pepper

Start with whipping the mustard and oil together so you get an emulsion, add the spices, and soy sauce, and orange zest (thats finely grated) and orange juice.

I use to add some dried chiliflakes aswell. Gives a nice spicy taste, and a hot after taste.

Works on pretty much to anything. I just cant make my babyback ribs without it. Gives nice taste to rice and bulgur aswell.

And my babyback ribs i do by first getting some really nice ribs from your local butcher. Buy some Hickory Liquid Smoke, the one i use say 1 part liquid smoke per 10 parts water, i use 13-15 parts water instead. Let the ribs go for 45 min in the water on the stove. Take out dry the ribs, and let them cool, pour over the sauce, and bbq them.
