I always thought it was the day before Ash Wednesday (pancake tuesday being the day christians got rid of, by cooking it all together, all the stuff they were going to fast for lent. :/) iirc ash wed is different every year.

Pancake Day (aka Shrove Tuesday) is the day before Ash Wednesday, the first day of Lent. Lent leads up to Easter and as Easter moves every year Pancake Day moves as well.
