I just love this traditional japanese food, consisting of raw fish.
Just got some of it home from my brother(made it last day), but the rice was soo hard now, so planned on making it myself.

Anyone got some good recepis for this? Or good tips or misstakes I should be carefull to avoid ? =)

Anyone actually NOT know it's a traditional japanese food? :D

One good tip is to make sure you store the fish in the cold until the last moment, salmonella is a b*tch and it's easier to get on food then one thinks. Furthermore, don't use lakefish. There's a real health hazard there, ocean fish is the best bet.

Also don't be afraid to experiment, the most boring part about homemade sushi is that people go with the saaaame ooooold sh*t every time.

Also remember, sushi doesn't equal fish, raw fish is sashimi, not sushi ;)

Yeah, my misstake there =)

I know Sushi comes with different toppings, where raw fish is only one of them =)

But to everyone else, who haven't tried this. It's like having a orgasm in you're mouth. mmmmmm!

Use some japanese rice vinegar for the rice - besides that, it's pretty much straight forward. Don't put Wasabi inside the maki's, unless you're used to deal with it :)

Oh yeah, forgot to mention that there's also ocean fish that are bad. So make sure the fish is ok to use.

Basically, like with any fish food, research and make sure ;)

I like riceballs myself, which, well, sounds like i like oriental scrotums :p

Kinda discovered that the bad way, tried eating it with some normal rice bought in the store(Was sooo cheap:p). Everything ended up falling apart.

Thanks for all the advice tho. :)

Eaten in Ubon & Nobu. The food there was superb, but given a list of restaurants to eat in, sushi would be fairly low down on the list for me. No idea how to make it - if I was desperate for sushi, I'd go to a restaurant

Sushi surely isn't the easiest dish to make, takes a lot of effort and preparation and most the times a commoner fails at it.

But it's a very impressive thing to learn ;)

Wonder if that would be a good topping on Sushi!

"Theres no good food in jail, unless you count sushi...."
i think the quote would be: "and the food! theres no sushi in prison unless you count dick"

and i agree with lamp, its not something id bother making myself, i enjoy the experience as a whole, being at a good resturant in the right enviroment. Its not my everyday food (cept when i was in japan!)

It doesn't have to be fancy: nori paper + rice + fish fingers + mayo with hot sauce = win.

Worked in the Japanese food industry for about five years, my favourite dish has always been uni - sea urchin.
