Do they keep a list of peeps who have added on them and so when they see a solo dude they stop to check their list to see if they should gank them or not ?

Seems unlikely to me.

Not seen too many of these big guild groups who are unwilling to add or unwilling to gank a solo toon - there are a few, but not as many as would claim.
