Is it possible, and is it easy to get hold of a cable to do it?

You can get a VGA box that will transcode the 480p output of a PS2 to a VGA signal. I got the VD-Z3 for my Xbox a year ago so I could play it on my PC LCD, it worked pretty well and the games that supported 720p looked great for a 5 year old console. Anyway, you can buy the box from the link below, it ain't cheap but it can be used with alot of other consoles and is useful for getting progessive scan DVD playback onto your PC as well.

Don't be tempted into buying a cheap VGA box though, as they are usually just line doublers not transcoders so the picture output looks like crap. If you are really stuck you might be able to talk me into parting with my VD-Z3 for a fair price :)
