you can using a program like VNC However the update rate would probably be horrible and the computers would have to be networked. I can't think of any other way of doing it, might well be some cables you can get if your laptop has the right ports.
can get cheap monitors now though.. VNC is just a way of controlling one PC from another, not really using it as a monitor. Plenty of other programs around that are the same but they all suffer from screen lag as they're not really meant to be used for games etc
