I'd like to have something similar but with my own background and letters.

It's done using the PHP GD Library. It tends to be installed on most web hosts.

I've never done any server-side image generation before, but I'm sure if you good for the above then you can find some tutorials.

Crickey, making my head swim reading some of that; not sure if it's because I'm too tired or too stupid.

I guess I have to make an image for every letter and symbol I want to use, and a background to display them on; but when people start talking about opening up shell a fog goes over my brain.
