Hunters are the bowmen in Midgard. You start off as a rogue then become a Hunter. If you want to become a Huge axe-wielding tank then I'd guess you should go for a Troll Warrior type.

Right I just bought it and im bloody confused allready. I accepted a quest but i cant find the bast that I need to talk to and to make matters worse I cant even remember his name?!?

You've got two ways of finding out..depending on whether you've been given a task or a quest.

If it's a quest it'll be in your journal in your stats screen (first pictuer on the bar on the top right).

If it's a task, you can type /task and get info about WHO you had to deliver it to but not where unfortunatly. If you're in the vague area, you can try going up to a guard and saying /where (person you're looking for) and if you're in the right town they will point you in the right direction (literally).
