The bottles I assume you refer to generally contain pressurized gas with the liquid, i.e. wine, bear, coke. Actually I believe wine is depressurized to make the cork sit inside, but the same rules apply.

A curved surface can bear a greater pressure than a flat one, this is why tunnels are generally round and gas cylinders are sausage shaped. The curved surface can be either way, convex or concave, but obviously a convex one would not stand upright, so an inward (concave) one is used instead.

Coke cans also have inward curved bottoms for the same reasons, as do some Calor Gas cylinders, the graduation of the curved surface is dependent on the strength of the material used, the tin alloy in cans and the steel in gas cylinders is obviously a lot stronger than glass so the curves are less pronounced.
