tesco doing blueberries at 1/2 price atm (still expensive at £1.50 a small pack) so I thought i'd have a crack at making fresh blueberry muffins...

I was amazed at how simple it is to make muffins except the stirring bit when you add all the flour then it was a bit too hard so i had to enroll a kitchen assistant but aside from that (if your not a puny sod lol) its well easy

How to make blueberry muffin:
The classic blueberry recipe that speaks for itself.
Ingredients
3oz butter
3oz sugar
2 teaspoons baking powder
1 egg, beaten
8oz plain flour
110ml milk
3-5oz blueberries
(see measure conversions for more information)
Method
- Cream the butter. (I melted it in the microwave for like 30 seconds)
- Gradually add the sugar and the egg.
- Mix 1 tablespoon flour with the blueberries and put to one side.
- Sift the remaining flour with the baking powder.
- Fold the flour and baking powder into the butter, sugar and egg mixture.
- Stir in the milk.
- Mix in the berry and flour mixture.
- Bake in greased muffin tins at 200 degrees C. for about 25 minutes.
btw if you do do these, don't fill the muffin tray lol they expaaaaand
