The official site has reasonable "release notes" for the big versions (4.1, 4.2, 4.3 etc):

It wasn't until fairly recently that I flashed 4.1.2 on my phone. Until then I was using 2.3.4 Gingerbread for fecking ages. Phone still did everything I wanted it to. Now its just a tad smoother and I can do some interesting things with videos and capturing I couldn't before. Probably won't flash a new firmware until I get a new handset now.
