some others:

FF7 with better graphics would be sweet. But maybe they could also give a decent reward for defeating ruby weapon, since all you get is a gold chocobo, and you NEED that to get knights of the round, to have any chance of beating the fooker. anyway...

Definetly monkey island. Had so much fun with those.
Discworld series (first ones graphics are a little outdated, though saying that i'd happily play it now )
WoW with better PvP (might still happen in patch 1.12!! )
FFX-2, wish they made it more rpg style like the last, lots of things could be improved.
FFXI - too many dmg classes trying to fit into a few slots makes getting a party a fucking nightmare alot of the time unless you play in a static party, or are one of the few support classes. Also, give EU servers

But bugged to hell and back, then they release a patch saying it fixed a problem but you had to start again... bug still there.
New patch saying they ficed it but again have to start from scratch, get to that point again and it happens again, gave up.
If you liked elite then you could try X3 reunion, thats the nearest i can find as being an open ended game (you can carry on after completing solo quests)

And as was mentioned the bards tale was a completely differant kettle of fish from the original.

Star Control 2 has been updated by the fans to include voices ect

Hmm think i would like to see Dark Scepter redone, would have said lords of midnight but i remember the 3rd version with the stupid maze with trolls.
