single player mode and pvp?

I know that in the starting area you can go to an inn and switch between day - multiplayer to night - single player.

Will this exist on the pvp servers? Also have they decided yet how high people can go in single player mode - would be odd for a pvp server if they can level to 80 in single play??

You have misunderstood abit. The night time feature is to do the destiny quest to get out of Tortage from level 1-20. Beyond level 20 you are in a MMORPG world like any other. No single play but only solo play if you wish. And yes, night time will also exist on the PvP servers. But there is only one quest line there, so not much exp to go on.
