Is there a way of recording direct into mp3 (or wav if needed) from a live stream?

i.e i listen to a radio station online and can record that?

QCD is what I'd highly recommend. It's able to save streams to disk as you listen to them, and imo, its output is of a higher quality than Winamp.

The UI and skins are a bit pants, but I think the improved quality and other features more than make up for that.

I'd suggest grabbing the latest dev build rather than the stable, as it's got quite a lot of new bits in it.
