Our GM has left the guild, and now we haven't got a GM. What can we do?

Hrm... until 1.48 not very much as far as I know.
Not sure if it's in this lot of patches but soon there's a thing that promotes one of the higher level guildmembers that are active to the leader spot if your leader is not in the guild or has been idle for 2 weeks or more.
I think it's before 1.49 but could be wrong.

You could try logging it with RightNowSometime...
They should be able to promote someone to GL status.

I seem to have deleted the email but...
Our GM did the same thing. I'm afraid to say that GOA will not interfere in guild issues, except as far as bugs go. You'll have to start a new guild.

The next patch will fix it. It has a feature that will autopromote a new guildmaster if the previuous is inactive.
