You mentioned that if an agressor came on to a defender with a baseball bat/golf club/etc it would be OTT for the defender to break a leg, or an arm, or poke an eye in to the back of their head.

What I ask you now is why is an agressor going around attacking innocent people with a weapon, and why is it OK for them to do that but a defender is OTT to break that attackers arm to ensure their own safety? It is reasonable force in the eys of the law. But the point is why is it ok for one fo your kind to attack people with weapons but its not ok to fight back in an equal manner.

It takes very small amounts of force to break an arm at the elbow or smash a pattela in to the middle of next week, a lot less than a chav with a golf club will exert on an innocent victim.
