If the person who threw it knew what they were doing then the knife would be pointing at you by the time it got close enough to catch. Simple matter then of speed, not so much of hand-eye coordination.

It depends on the speed. Juggling was my hobby for quite a long time, so I`m used to catch spinning objects like clubs etc. I might have a chance to catch it, but since the rotation speed of a knife is usually a lot higher, I`d say it´s very difficult.
