I'm going to start a Briton friar and thought that putting 10 in str, dex and con would be the best move, however because i'll be use a 2-handed weapon would it be best to put some in qui.

Also how important is it to spec parry?

don't put any in str - staff damage is entirely based on dex.

All str will get you is the ability to carry more.

dex/con/qui might be fairly sensible... I know one friar who recommends 15 dex 10 con (but you lose out 5 stat points that way)

most friars don't put much in parry...

its not as important as the other specs so most use it for leftover points

that said after bonus and RAs i have 30 effective parry

When i made my friar i put 10dex/10cons/10piety cause friars do alot of healing even at lower lvl if they dont solo..
I have no idea if it was a smart move since my friar is only lvl15 atm, but i sure know that i have been healing more than fighting even tho im specced as an Battle friar with max staff and rest in Enhance...

more piety means more mana... can't be a bad thing when that's what your end regen runs off :)
