as I have to cook for myself tonight, decided to make spicey marinated chicken with stir fried shi-take's and some baby peas thrown in for good measure. Egg noodles cooked, then fried in some sesame seed oil should round it off.
all agreed?
I'd like to put in some more veggies but at a loss atm to think of one so suggestions are welcome :)

thinking about chucking in some paksoy stalks to stir-fry as the missing extra veggie but I'm not sure I can get some. we'll see :)

paksoy? hmm, it's called that over here in holland. You guys might call it 'chinese cabbage' or something like that. it's a large veggie with white stalks and floppy green leaves. you can do all kinds of things to it cooking-wise and I like it as it's a great extra and it also adds a splash of color :)

A good and simple chinese dish which is easy to make is chicken, dried scallop and shitake mushroom pot rice.

Take 2 chicken thigh fillets. Cut into small strips and marinate in light soy sauce.

Slice 4-5 shitake mushrooms and the same of dried scallops and soak in cold water for 20 mins. After chop these up into strips rather like the chicken.

Take an earthen ware pot and put in 2-3 cups of washed fragrant jasmine rice and double in volume of cold water.Add some crushed ginger to the rice.

Steam the rice over hob for 10 mins.

Then put the chicken, mushrooms, scallops and some more crushed ginger into the top of the patially cooked rice.


Cook for another 10 mins until rice is done.

Pour over some light and dark soya sauce, some sesame oil and gently cook for 5 mins more.



Serve in rice bowls with some steamed Pakchoi with oyster sauce and some Chinese tea.

mmm sounds great. I'll try that sometime :)
what I did was cut my chicken fillet into strips and marinate 'em in some dark soy, with ginger and some spring onions and a liberal sprinkling of powderd red pepper [the hot kind] and a slosh of sesame oil. left that while I cleaned some paksoy, sliced the paprika [natural, not hothouse] cleaned and sliced 4 large shi-take's and some more spring onions.
then I got a pan real hot with some more sesame oil. then I added a few drops of a 'special' sauce I got at a west-indian market. it's a sort of chili sauce and it's REALLY REALLY hot so I never use more than a few drops. it adds a lovely taste to the dish as you can taste it but it doesn't burn like sambal. then I chucked in the chicken and stir fried in the paksoy, paprika, onions. put the shi-take in last when I had about a minute to go.
served it to myself with some noodles and a beer, wheee :D

puh, I like that too, but there's nothing like a great [homecooked] meal, candles, wine, grrl and then some serious err television, just to round things off :D
