OK especially for Spinky in #freddyshouse who's been bugging me for this all evening.....

Don’t ask me what it's called... It was actually supposed to be something else. I forgot some of the original ingredients and managed to concoct the following…..

Skinless chicken breasts
Butter
Soy sauce (I use Kikkoman but it’s quite salty)
Toasted sesame oil
Honey (set or clear)
Sesame seeds

I have to admit I guessed the amounts of ingredients used but anyone with any common sense will know roughly just by looking!

OK so I melted the butter
The heat from the warm butter melted the set honey when I stirred that in.
Threw in some soy sauce and sesame oil.
Marinated the skinless chicken breasts in this overnight

Now to the cooking bit.

Overproof dish laced with toasted sesame seed oil
Put the chicken in
Poured over the marinade. I did make a little more of the soy sauce, honey, butter and sesame oil for a bit extra.

Chucked in the oven at about 160ish for an hour or so. (you know when it's cooked) Only thing to remember is to keep basting the chicken every 10/15 mins or so while its cooking.

15 mins before the chicken is done throw sesame seeds all over the chicken. You want to put it back in the oven for another 15 mins or so until the seeds have browned. If you are gonna use the grill to toast them make sure you don’t burn them cos it’s easy to do.

I’ve had this with stir-fry veg and salad before and it’s bloody marvelous!!!


PS forgot to add the chicken needs to be defrosted and I used the juices when I did the stir-fry veg.

Old thread I know, but im cooking this tomorrow!
I just have a few questions on quantities ;)

Ive put the chicken in to marinade, i used about 2/3 of a packet of butter, half a jar of honey and a good sloosh of soy sauce and the oil stuff, it looked a nice golden colour when I poured it over the chicken. Does the sound right?
Im cooking for 8, so ive got 10 chicken breasts stacked up, the sauce just came up to the top of them. Do I need more? Should i spoon the sauce pooling at the sides over the top?
Is the sauce supposed to set/go more viscous(sp?)?

For the cooking, does the sauce need to cover the chicken, or should i just spoon it over every now and then?
Should i make more sauce as a "gravy" or just use whats left around the chicken?

Im planning stir-fry and noodles to go with it, i was thinking about drizzling some sauces over the noodles and using some to stir-fry with to make sure they're not too dry, how does this sound?

Any comments?

Some things i'll probably do differently next time.
I used the marinade juice to stirfry the veggies as it was mainly butter ;) It worked well as the flavour was passed into the veggies so they tasted good.
There was however about 1cm of marinade/butter stuff (see 2nd picture) in the bottom of the containers i did the chicken in, I didnt dish this up because it was 90% melted butter and would just make the meal even more greesy.

Greese was a problem, possibly my own fault, it was hard to know what sort of quantities to use in the marinade so i ended up using loads of butter, this made both the outside of the chicken, and the stirfry quite greesy, Im thinking about not using any butter in the marinade and just adding some to the sauce the chicken cooked in.

Overall though, a good recipy :D

I thought that might be a problem when you said how much butter you used, Tilda... If I were you I'd try it again and this time use about 1/4 of the amount of butter you did before, maybe adding a little for taste or to richen the sauce towards the end.
